Wondering what to make for dinner? We're here to help with a month's worth of weeknight recipes for the month of June. And we're all about eating with the seasons so our dinner ideas include plenty of fresh tomatoes, zucchini, and grilled meals.
Sometimes you know what you're going to make for dinner and sometimes you don't. For those don't know days or anytime when you just need a bit of weeknight meal inspiration, we are here for you with our monthly guide to making weeknight dinner.
Our recipes come together in less than an hour, often that's mostly hands-off time, and some recipes will be much faster than that. We'll suggest what you can do to prep ahead and cut down on weeknight work and build some meals around smart store-bought short cuts like rotisserie chicken and pizza dough, plus our old favorite, canned beans.
And because it's June, well we're all about fresh produce this month because there are so many good things to eat. Cue the local tomatoes on everything, plus zucchini, eggplant, bell peppers, and more. Those tomatoes feature in the recipe we've got to start the month off, Pork Agrodolce with Fennel and White Beans. Tomato slices along with pork chops that are brushed with honey and oil and grilled, are the sweet part of this agrodolce and the white bean and fennel salad is the tangy counterpoint.
Beyond that we've got pasta, salmon, main dish salads, and more that you'll want to eat this month. And while we never like to get stuck in the same dinner routine, there are certain themes that help guide our dinnertime decisions. Look out for our Meatless Mondays. Salmon-Shiitake Rice Bowl
Only 15 minutes of prep work is needed to make this jasmine rice bowl. Skinless salmon fillets marinate in miso paste, honey, and rice vinegar—then, the fish is broiled and then served over fluffy rice and peas.
Bacon, Pea, and Fresh Herb Pasta
This is the fastest meal of the week. It's a herb-heavy dish that come together in 20 minutes. It's packed with fresh parsley, dill, and chives, plus sweet peas and a touch of goat cheese—oh yes and there's bacon too! Any short pasta works for this recipe.
Grilled-Asparagus, Tomato, and Fontina Pizzette
It's time to get out the grill—if you haven't already. Use store-bought pizza dough to make these individual pizzas in a flash. Pair them with a hearty bean salad (made with canned beans for ease)—and maybe a Friday night glass of wine?
Cauliflower-and-Chickpea Pitas with Creamy Yogurt Sauce
Everyone will enjoy this plant-based meal. Cauliflower and chickpeas are seasoned with cumin and roasted until golden brown. Then they're stuffed into pitas with a zesty sauce made from cilantro, lime juice, and jalapeño peppers.
Rotisserie Chicken with Yogurt Sauce and Herb Relish
When you need a super quick and totally delicious dinner, dress up store-bought rotisserie chicken with a spiced sauce made with yogurt, celery, and cumin. This meal comes together in just 20 minutes.
Broccoli-and-Hazelnut Pesto Pasta
This is no ordinary pesto. Steamed broccoli is puréed with essential ingredients like basic, garlic, and Parmigiano Reggiano—plus hazelnuts, ricotta cheese, and lemon—for an ultra-flavorful sauce for gemelli pasta.
Grilled Beef Skewers with Zucchini and Mint
All the beefy flavor but less meat, that's this grilled dinner. A healthy combination of brown rice and vegetables balances out the meal so we use just one 8-ounce sirloin steak for this dinner for four.
Herby Broiled Swordfish with Roasted Cherry Tomatoes
This is a rather special weeknight dinner. Meaty swordfish steaks are served over juicy, garlicky roasted tomatoes, we think they're the ultimate summer side to accompany broiled fish.

We love a fast meal, we love a good handheld dinner and we love a clever way to use ground pork. This recipe offers all three. The meat is stir fried with hoisin sauce, sambal oelek, and vinegar, then piled onto hot-dog buns and topped with fresh herbs and a tangy bok-choy-and-red-pepper slaw. It's ready in just 30 minutes.
Chicken Schnitzel with Dill and Sesame
Crispy, breaded chicken never disappoints but this recipe takes it up a notch. An easy panko breading is mixed with sesame seeds and dill weed; the seeds provide extra crunch and the dill brings a bright, lemony flavor.
Egg "Noodle," Broccolini, and Mushroom Stir-Fry
Here's a fun take on lo mein that uses low-carb egg "noodles" made from slices of an omelet. As you'd expect with a stir-fry, it comes together fast; this colorful, healthy dinner will be on the table in 35 minutes.

You can put this vegetarian pasta dish together in just 35 minutes. It's protein-packed dinner you'll add to your regular dinner rotation.
Baked Rice with Sausage, Peppers, and Corn
A one-skillet dinner made with Italian sausage, arborio rice, bell peppers, and corn make is a colorful, flavorful, and mostly hands-off meal.
Poached Salmon with Potatoes, Cucumber, and Buttermilk-Dill Dressing
Poaching is one of the easiest ways to cook a moist piece of protein like salmon. Serve the fish alongside boiled baby potatoes and crisp cucumbers, then top with a fresh and creamy dressing for a complete and delicious meal.
Grilled Chicken with Mango and Mint-Lime Dressing
With golden mango, pink radishes, vibrant green watercress, and bright white goat cheese, this a very colorful dinner. The zesty mint-lime dressing does double duty here: It's a marinade for the chicken breast halves and the dressing for the salad.

Pork Rib Chops with Sweet Peppers and Basil
Got 30 minutes? They you can cook this one-pan dinner with which calls for only six ingredients. First, pork chops are seared until golden brown. Then they're transferred to a plate so that the peppers, onion, and basil can cook in the same skillet. Serve with plenty of crusty bread to sop up the delicious pan juices.

Crisp romaine mingles with nutty bulgur, sweet snap peas, and briny shrimp in this main-dish salad that's become one of our favorites.
Tomato-Eggplant Gnocchi
Sure we love to grill when the weather is warm and we also adore no-cook recipes during the summer but we haven't given up on the stove just yet. This hearty but not-too-heavy, one-skillet summer dinner has everything going for it. Store-bought gnocchi cook atop an eggplant and tomato sauce. Red pepper flakes give the dish a little heat that's tempered by a touch of creamy ricotta on top.
