Easy Sheet-Pan Eggs

Skip the stovetop and go straight to the oven to whip up sheet-pan eggs and veggies. Start with your favorite roasted vegetable recipe. Right when the veggies are tender, remove from the oven and use a spoon to create 4 to 6 wells, depending on how many eggs you want. Drizzle or spray a touch of oil in each well and crack an egg into it. Return the sheet pan to the oven and bake until the whites are set, leaving the yolks rich and creamy.
