What's for Dinner This Week: Rotisserie Chicken, Gnocchi with Sausage and Tomato, and Other Fast Meals

Ease back into routine with some speedy, but still summery recipes.

What's for dinner menu 9.2.22

Wondering what to make for dinner? Need some inspiration? Here's our list of suggestions: dinner recipes that take less than an hour of mostly hands-off time. Yes, there will be pasta (or noodles!) and, yes, it will be delicious. We'll be here every Friday with five weeknight dinners, including recipes, shopping lists, and everything you need to streamline your week ahead.

Fast is the theme of this week, because after Labor Day, life catches up—it's back to school and back to routine. So dinner in 20, 30, or 35 minutes makes sense (and helps us stay sane and well fed).

With that said, we're not giving up on summer just yet; we're still turning on the grill some nights, but we're using the broiler, one of our favorite routes to a super-speedy meal, and stovetop, too. And we're still embracing fresh corn and all those tomatoes—at least for another week or so.

What to Make

01 of 05

Double-Portobello Burgers with Roasted Tomatoes

Anyone who says vegetarian food isn't filling hasn't tried these mushroom burgers. Two portobello mushroom caps are sandwiched with provolone cheese inside whole-wheat hamburger buns. Talk about hearty.

The recipe calls for oven roasting—and while you could do that, we suggest you grill them and savor every last bit of summer while you can. Use a grill basket to give tomatoes the perfect char.

We're using the broiler tonight for this ultra-fast, lively, and light dinner. If you've got 15 minutes, you've got this. Added bonus: You can use any kind of fish in thin fillets, such as flounder, fluke, or lemon sole.
